With over 3000 kms of coastline plus numerous natural and artificial lakes, there are a wide variety of watersports in Morocco including Sailing, Scuba Diving, Surfing, Kite Surfing, Canoeing and Rafting. There are a wide variety of schools and clubs if you need to have lessons. Morocco also hosts some international Windsurfing competitions as Essaouira has wind 320 days of the year and has become known as The Windy City
There are also hiking clubs to take you through the Atlas Mountains
You can ski in Morocco for several months of the year until late April in Oukaimeden which is 70km from Marrakech, alternatively there are winter sports including Mule Skiing in Mischliffen which is on the doorstep of Meknes and Fes.
